Artichoke Salad

If you like artichokes, you will like this rather unusual Artichoke Salad.  *1-box of chicken flavor rice/pasta mix *1/2-cup cut in quarters black olives * 1-cup of canned artichoke hearts cut into chunks *2-chopped green onions *4-boiled eggs-chopped *3/4-cup mayonnaise *1-Tablespoon Dijon mustard *salt & pepper to taste.  Cook rice/pasta mix according to directions.  Let it cool.  Mix mayonnaise and mustard together and stir into cooled rice/pasta mixture.  Fold in rest of ingredients and chill completely before serving.  Diced green pepper or celery are optional.  You can also use marinated artichoke hearts instead of plain ones.  De Hart Plumbing, serving Manhattan Kansas, Junction City Kansas and Wamego Kansas
