Fried rice is good comfort food. Recipe as follows. *1/3- cup vegetable oil *2- cups cooked diced meat (ham, chicken, pork or bacon) or no meat at all *1- small diced onion *3- minced garlic cloves *3- sliced green onions *1/3- cup frozen peas & carrots *1/3- cup frozen corn *4-large beaten eggs *4-cups cooked rice *Salt, pepper & soy sauce to taste. In a large heavy skillet, add 1 tablespoon oil. Sautee meat, then add onion, cook 2 minutes. Sautee in garlic for about 30 seconds then add frozen vegetables. Cook until vegetables are defrosted then transfer all to a large bowl. Heat 2 tablespoons oil in same skillet, add the eggs and scramble around till cooked, breaking into small pieces, transfer to the bowl. Return pan to heat and add remaining oil. Add the rice and stir fry. Season to taste with salt, pepper and soy sauce. Transfer all ingredients from bowl into skillet and stir fry for a minute. Serve and enjoy!
