Try this delicious recipe for Mexican Caviar. *1-can drained & rinsed black beans *2- roasted ears of corn-cut off cob *2- cans petite diced tomatoes * 1/2-cup small diced sweet onion * 1/4- cup chopped fresh cilantro *1- jalapeno- seeded and chopped. *2- minced garlic cloves * juice from half a lime * salt to taste-optional. Combine all ingredients in bowl. I would recommend not salting until you taste it first. Serve with tortilla chips.
