Cheese & herb potato fans can accompany any meat. *8- medium baking potatoes *1/2- cup melted butter *2-teaspoons salt *1/2-teaspoon pepper *2/3-cup shredded cheddar cheese *1/3 -cup shredded parmesan cheese *2-teaspoons minced chives. Preheat oven to 425 degrees. With a sharp knife cut 1/8 inch slices across potatoes but leaving slices attached at the bottom. Fan potato slices open slightly. Place in a greased 9 x 13 pan. Mix melted butter, salt and pepper. Drizzle evenly over potatoes. Bake 50 minutes. Take out and sprinkle with cheeses and chives. Bake 5 more minutes. Serve with a meat of your choice and a salad.
