These Chicken Enchiladas are quick and easy to make. You will need: *8- flour tortillas *2-cups cooked, shredded chicken *2-cups shredded Monterey Jack cheese *1-can Cream of Chicken soup *1/2- cup chicken broth *1-can diced green chilies *1-cup sour cream. Preheat oven to 350*. Spray a 9×13 pan with cooking spray. Mix chicken with 1 cup cheese. In a bowl mix the chicken soup, green chilies (un-drained) and sour cream. Warm the tortillas so they are easy to roll. Roll tortillas with filling and place in the pan seam side down. Pour the sauce over enchiladas and top with remaining cup of cheese. Bake 20-25 minutes.
