Chocolate Zucchini Cake is a different twist on using your summer zucchini. *1/2-cup melted butter *1-3/4-cup sugar *2-eggs *1/2-cup oil *1-teaspoon vanilla *1/2-cup buttermilk *2-1/2-cups flour *1/2-teaspoon baking powder *1-teaspoon baking soda *1/2-teaspoon salt *1/2-teaspoon cinnamon *4-tablespoons baking cocoa *2-cups shredded zucchini *1/2-cups chopped walnuts(optional) *1-cup chocolate chips. Blend first 6 ingredients together. Mix all dry ingredients together and add to wet ingredients. Mix in shredded zucchini and nuts. Spread into a greased 9×13 pan. Sprinkle chocolate chips evenly over top. Bake @350 degrees for 40 minutes or till done in center. Cool completely before serving.
