Make a quick and easy coconut pie this weekend. *One 9″ unbaked pie shell *3-beaten eggs *1-cup sugar *1/2-cup whole milk *6-tablespoons melted butter *1/2-teaspoon salt *1-teaspoon flour *1-cup coconut *2-teaspoons vanilla extract. Whisk or beat all ingredients and pour into pie shell. Bake in preheated *350 oven for 45-50 minutes, or until center is set. If you don’t like the edges of the pie crust to get too brown, cover them with foil. Cool and serve. Serves 8.
