Serve up a potato skins bar for the Super Bowl. * 8-russet potatoes (same size or close to it) *Vegetable oil *Kosher salt * 8-slices bacon-cooked crisp and crumbled *1-cup grated cheddar *1-cup diced ham *1-cup store-bought salsa *1-cup sour cream *1- cup ranch dressing *1-cup chopped green onions. Preheat oven to 400*. Wash potatoes and pat dry. Rub skins with vegetable oil. Place on baking sheet and bake for 45 minutes to 1 hour. Once cooked, slice lengthwise and scrape out the inner flesh with a spoon, leaving a small margin of potato in the skins. Brush both sides with vegetable oil and salt both sides. Place skins cut side down on baking sheet and return to the oven. Bake until skins they are crispy, 7-10 minutes. When ready to serve, place the skins on a platter. Put all other ingredients in separate serving bowls and everyone can create their own potato skin. Different variations could be a potato skin/chili bar. A potato skin/taco bar.
