It’s getting cold outside so what’s a better way to warm up than to make a big bowl of chili? This recipe freezes well (if you somehow have leftovers) and has just the right amount of kick to it.
1 lb ground beef
2 yellow onions, diced
1 green pepper, diced
1-14 oz can of Rotel(hot)
2-8 oz cans of tomato sauce
2 tbsp cumin
2 tbsp chili powder
1/2 tsp cayenne pepper
1/2 tsp paprika
1 can of kidney beans, drained and rinsed
1 can of black beans, drained and rinsed
1 C water
Cook ground beef and break into pieces until browned.
Add onion, green pepper, and jalapeno and cook until softened.
Drain excess grease.
Add all remaining ingredients and mix well.
Bring to a boil then cover and simmer for 1 hour.
Top with cheddar cheese, sour cream, green onions, and crackers.(Optional)
